main composition is anthocyanidins.
Properties: Red Cabbage is a purple-red liquid
or powder, which easily dissolves in acid alcohol and acid water, but
not in fat solvent. Its solution is red in acid medium and green in alkaline.
The resistance to light and heat is high in acid mediums. The pigment
is applicable to coloring food.
